Niigata Nagaoka style ginger shoyu ramen. The soup is made using pork bones and chicken bones, combined with a dark soy sauce tare and ginger sourced from Kochi Prefecture. Medium-thick flat noodles are by Mikawaya Seimen. Soft pork chashu is braised in shoyu, other toppings include bamboo shoots, spinach, negi, nori and naruto. Chashu rice bowl on the side. Shio ramen is also available, using salt from France.
The master previously trained at the Hachioji shop ‘Niboshi Ramen En’ and is a huge fan of the English Premier League team Liverpool FC. The shop is named after former Liverpool FC player Dirk Kuyt. Nine seats. Since November 1st, 2018.
