Clear shoyu soup is made from Amakusa Daio brand chickens, along with several types of niboshi. Thin straight noodles are provided by Mikawaya Seimen. The tare contains shellfish and the aroma oil uses ginger and negi. Each bowl is also topped with rendered chicken oil. Topped with two types of pork chashu (shoulder and loin), ajitama, wontons, Kujo negi and rock seaweed. Other menu items feature shio ramen and a richer niboshi-chicken option.

Ramen Jazzy Beats is the 3rd concept by master Yanase-san, who also runs ‘Ramen Break Beats’ and ‘Ramen Afro Beats.’ A former DJ, Yanase-san worked as a chef in Canada for eight years, teaching himself how to make ramen. After returning to Japan he went to eat ramen at Shibasakitei almost every weekend, getting some advice from the master there before opening his first shop in 2022.
