稲中 (江戸甘味噌) / Inachū (Edo Ama Miso) / Kitchen Kiraku — Jimbōchō, Tokyo
Clear soup is made from chicken bones, combined with a Tokyo style sweet miso tare. Thin-straight dried Inaniwa chūka soba noodles are supplied by Sato Yoetsu Honpo, a company based in Akita Prefecture. Topped with low-temperature cooked pork chashu, bamboo shoots, chives and sesame seeds. Curry rice on the side.
Kitchen Kiraku is a new concept by master Sakata-san, who also founded the well known ramen shop Menya Shichisai. Aside from ramen, Kitchen Kiraku also offers katsu, fried noodles, Japanese sweets and coffee, amongst other dishes. Occasionally they even serve ramen with bear meat. 10 seats.
