醤油らーめん味玉入 / Shoyu Ramen Ajitama-iri / Craft Ramen BiT — Iriya, Tokyo
Japanese-Western fusion soup combines seafood dashi and ingredients such as bonito flakes with a consommé soup made from venison and chicken. Medium-thin low-hydration straight noodles are housemade in the shop using a Yamato noodle machine. Topped with pork chashu, smoked ajitama, burdock root, mushrooms, semi-dried tomato and Senju negi. Chashu rice bowl with pickled egg yolk on the side.
Master Yoshiaki Mikami-san first worked at a noodle factory in Tokyo, then trained at Ramen Kai in Kuramae for about two years before going independent. He does all prep and runs the shop solo. Seven seats. Since February 26th, 2024 @craftramenbit
