秋のまぜ二ボ + にぼしらぁ麺 / Aki no Maze Nibo + Niboshi Ramen / Ramen Harinezumi — Takatsuki, Osaka
Limited autumn niboshi mazesoba contains a base soup using five different kinds of dried sardines. Temomi noodles are house made with Super Haruyutaka brand wheat flour on a Yamato machine. Topped with iwashi confit, sauteed eringi mushrooms and negi. The 2nd bowl pictured is the standard niboshi ramen which contains a soup made from 100% dried sardines, along with pork chashu, bamboo shoots and mitsuba leaves. The menu also features shoyu ramen containing a triple soup of Awaodori chicken bones, niboshi and shellfish, all of which are extracted separately.
Ramen Harinezumi is a shop which specializes in clear soup. Master Matsumoto-san is from Osaka, he first became interested in Ramen after eating at the Tokyo shop ‘Hirugao’ around the year 2000. After that he studied ramen on his own for 2-3 years while in Hong Kong, then returned to Japan and ate at over 800 ramen shops in Tokyo. The name ‘Harinezumi’ is a reference to hedgehogs (he likes them). Only open for lunch, 11:30am to 2:30pm (or until sold out). Eight seats. Since February 25th, 2017.
