しょうゆラーメン / Shoyu Ramen / Ramen Le Dessin — Shimada, Shizuoka

Shoyu soup is made from roasted duck bones, whole domestic chickens, chicken bones and pig trotters. Medium-thin straight noodles are homemade. Topped with ajitama, pork belly chashu and pea sprouts, negi served on the side. All natural ingredients, no preservatives or artificial additives. Other available menu options include shoyu and shio soup made with guinea fowl from Iwate and scallops from Hakodate.

Master Toshiaki Masuda-san first worked at a French restaurant in Shizuoka, then trained in Paris, Okazaki, Hakone and Tokyo. In 2003 he opened the French restaurant ‘Le Dessin’ in Tokyo, which he operated for 10 years before deciding to move back to his hometown and start making ramen. Open 7am to 1:30pm. 14 seats.
