こぞおま ラーメン / Kozo Oma Ramen / Kozō Mata Omaeka — Minami-Morimachi, Osaka
Tonkotsu-gyokai ramen is made with a base of extra thick pork bone soup, along with eight kinds of seafood ingredients sourced from around Japan. Some of the ingredients include katsuobushi, niboshi, flying fish, red sea bream and kombu. The shoyu tare uses Honjozo soy sauce, jointly developed with Matsushimaya, a soy sauce brewery in Shimane. Medium-thick flat noodles are provided by Mineya Shokuhin. Topped with pork chashu, ajitama, negi, diced onions, nori seaweed, naruto and fish powder.
Kozo Mata Omaeka is the third brand of Ramen Kozō. Company president Horikawa-san is an Osaka native, he started as a member of a ramen-eating club before getting a job at a ramen shop when he was 22. After training for several years, he opened his first store together with his sister. He now operates multiple ramen concepts and seven shops total. 11 seats. Since July 2019 @kozo.oma
