特製 醤油 らーめん / Tokusei Shoyu Ramen / Ramen Gamou Smile — Gamou, Osaka
Clear soup is made by slowly cooking whole Kuro Satsuma chickens for around 20 hours, so that the flavor becomes concentrated. Noodles are custom ordered from Menya Teigaku, with different noodles used in different bowls to match the soup. Topped with ajitama, two types of chashu made with Kirishima Kogen Royal Pork, menma, negi and mitsuba. The menu also features shio ramen using dashi using fresh, locally sourced fish.
Master Fukuzawa-san is from Fukui Prefecture and moved to Osaka when he entered university. He started out working part time in a ramen shop and trained for 10 years before establishing his own place. The decision to open Gamou Smile came after the closure of the Osakajo-Kitazume branch of Tsurumen, where he had been working as the shop manager. Open 7am to 3pm. Eight seats.
