つけめん / Tsukemen / Chūka Soba Tsuiteru Nakayama — Takii, Osaka

Nostalgic tsukemen uses a shoyu stock made from chicken, ginger and seafood including kombu, mackerel flakes and dried sardines. Medium width curly noodles are ordered from Kanezin. Toppings feature kuro buta pork chashu, bamboo shoots, negi and kamaboko fish cake.

Master Nakayama-san is said to have trained at the legendary Osaka ramenya Kadoya Shokudō. He occasionally operates his shop with the help of his mother. Eight seats. Open since October 2010.
