Clear shio triple soup blends Omi Kurodori brand chickens, shellfish and a Japanese-style dashi with kelp and bonito flakes, all using mineral-balanced Pi-Water for a clean extraction. House-made noodles are high-hydration, straight and medium-thin, from a unique blend of three varieties of wheat. Toppings for the “tokusen” include three types of chashu (pork belly, chicken thigh and chicken breast), ajitama and negi.
The master is a former chef of Japanese and Spanish cuisines, who trained in the ways of making classical soup stock before shifting his focus to ramen.
