ネギワンタンメン / Negi Wontonmen / Ramen Ishitomi — Kamonomiya, Kanagawa

Classic Odawara style ramen, containing a shoyu soup made from simmered pork bones and aromatics. Medium-width wavy noodles are supplied by Ōtomo Seimen, hand-kneaded before being boiled. Topped with slices of pork chashu, bamboo shoots, negi, wontons, mitsuba and nori. Fried rice and gyoza on the side.

Founding master Ishitomi-san trained at the ramen shop Shinasoba Murata, one of two legendary Odawara ramen pioneers (the other being Aji no Ōnishi). Since Shinasoba Murata closed circa 2014, Ramen Ishitomi is now considered the torchbearer carrying on the Murata taste lineage. Operations are now run by Ishitomi-san’s son and daughter-in-law, with the third generation already apprenticing in the kitchen. Founded in the early 1990’s, moved to the current location in 1994. Refurbished and rebuilt for seismic reinforcement in 2020. 14 seats.
