Kyoto style shoyu soup uses chicken carcasses and pork back fat. No MSG or chemical additives. Thin straight low-hydration noodles are custom made without kansui. Topped with pork shoulder chashu, kujo negi, menma and red pepper flakes.
Kyo Ramen Sadakazu was first opened in the Gion district of Kyoto in 2007, operating just three hours a day from 10pm-1am. The master eventually opened this 2nd outpost which is managed by a family member and is open only two hours a day, from 11:30am-1:30pm. Because of the limited hours, less than 35 bowls are served per day. The soup at this location is said to be slightly richer than at the Gion store. Seven seats. Since April 1st, 2017.
