特製醤油らぁ麺 / Tokusei Shoyu Ramen / Ramenya Fujitora — Uzumasa, Kyoto
Clear soup is made using both pork and Kuro Satsuma brand chickens from Kagoshima. Shoyu tare combines soy sauce from Shiga with Kanaiwa soy sauce from Wakayama. Noodles are housemade. Three types of chashu feature Biyu pork from Sakurajima, Kagoshima. Other toppings include ajitama, wontons, negi, nori and mitsuba. Shio ramen, tantanmen and mazesoba are also popular.
Master Fuchihara-san is from Osaka and went to University in Kyoto. While he was still school he started working at the Kyoto shop Ramen Touhichi. He expressed his desire to train there for four years before going independent, which he did with master Sodeoka-san’s blessing. 13 seats. Open since September 23rd, 2023 @fujitora_uzumasa
