中華そば / Chūka Soba / Chūka Soba Ichibanboshi — Okazaki, Kyoto
Rich soup is made from pork bones and chicken bones. Medium-thin straight noodles are served slightly soft, provided by the well known Kyoto purveyor Teigaku. Topped with pork chashu, bamboo shoots, bean sprouts, sliced egg and green negi. Pickles served on the side.
Master Morikawa-san is from Ishikawa Prefecture, he moved to Kyoto in 1962 and got a job as a taxi driver. At that time there were many food stalls and street carts around the city serving ramen, which is how he first became interested in the business. He opened his own ramen cart in 1972, hours were from 9pm (the time when the first stars come out) until 3am, which is how he came up with the name Ichibanboshi (meaning first star). When the opportunity arose to take over a space operated by a steak restaurant that was going out of business in his neighborhood, he accepted. 19 seats. Since June 22nd, 1975.
