カジメらーめん / Kajime Ramen / Sasuke Shokudo — Futtsu, Chiba

Shio-based soup contains pork bones, chicken bones, vegetables and kombu, finished with a light chicken oil. Locally made custom noodles have kajime (a type of brown seaweed) kneaded into them. Toppings include pork belly chashu, kajime, wakame, onion and negi. Golden Aji Fry on the side.

In the Kanaya area of Futtsu, some horse mackerel are non-migratory, living in a small nutrient-rich pocket of Tokyo Bay. Because the fish don’t swim long distances, they build up fat and develop a golden sheen. Branded as ‘Golden Aji,’ they are regarded as a rare locally delicacy. Located near the Kanaya fishing port, Sasuke Shokudō has long been considered one of the best places to eat this prized fish. Run by master Tsuyako Saitō and a team of elderly women. Breakfast and lunch only, 9:30am until the ingredients run out. 20 seats. Owner-operated since around 1999.
