Carefully crafted Fukuoka style pure pork bone tonkotsu soup is made without any artificial seasonings. Thin straight Hakata noodles are sourced locally. Topped with pork chashu, wood ear mushrooms, nori seaweed, negi and sesame seeds. Yakitori skewers are served using homemade sea salt which comes from pumping water in directly from the Genkai Sea.
Hanayama is a longstanding Fukuoka food stall, serving yakitori skewers, small dishes and ramen. The roots of this restaurant go back to the year 1923, when the original founder first opened a single udon street cart somewhere in Fukuoka. The name Hanayama and permanent location of the street cart was firmly established some time later, where the business has now operated continuously for over 70 years. Over time the kitchen has been extended and the surrounding space converted to additional seats. In September of 2018, a permanent restaurant structure was built around the existing street cart, preserving the original food stall atmosphere.
