The purpose of my trip to Yamagata was to enjoy wild vegetable cuisine here. I made a reservation for an 8,800 JPY course and visited on a weekday at noon. While waiting at the soba shop, I took off my shoes at the entrance and was guided to a private room with a view of the garden.I ordered a Gassan Beer for 900 JPY and a Wild Grape Soda for 1,000 JPY. I expected the Gassan Beer (Pilsner) to be a small bottle, but to my surprise, it was a medium-sized bottle. How generous!Wild vegetables kept coming out in abundance, and I experienced the unique feeling of being "full from wild vegetables" for the first time. I am truly grateful for the bountiful gifts of the mountains, filled with the vitality of "the long-awaited spring."
