From his grill in the foothills of the Atxondo valley, Bittor has influenced chefs across the globe with his singular fire-driven philosophy — a quiet but seismic force in modern gastronomy.
And then there’s Mohamed, the sommelier whose warm welcome and deep knowledge made this pilgrimage even more unforgettable. I can’t wait to return in October for my Basque weekender.
