In the heart of Hanoi’s Old Quarter sits “Phở Khói Hói” – a beloved institution with over 25 years of history and a well-deserved @michelinguide Bib Gourmand distinction🌟 We returned more than once for their signature “Phở Lõi” – a steaming bowl of noodle soup topped with medium rare beef heel muscle, sliced fresh to order for maximum flavour🤤

The broth is a quiet masterpiece: simmered for hours with beef bones and a warming blend of spices like star anise, cardamom, ginger, and cinnamon (so good we finished the soup every time)❤️‍🔥 Clear, rich, and deeply aromatic, it offers that soul-soothing depth that defines a true Northern phở💯 If you’re seeking comfort and complexity in a bowl, this spot is an absolute must✨
