It’s difficult to beat authentic sushi in Japan, but we do love the American interpretation of a “fusion-style” sushi😍 This food truck is located in the Lihau area on Kauai island of Hawaii, across from the @costco gas station exit⛽️ As with most other food trucks on the island, you can enjoy the freshly prepared food at their outdoor seating🌤

There was an extensive list of sushi roll variations, so we made 3 visits during our latest trip to Kauai🙈 Our favourites were the “Fire Dragon Roll” (spicy tuna roll topped with unagi, avocado and red tobiko drizzled with kabayaki sauce) and “Golden Tiger Roll” (shrimp tempura, organic king salmon, cucumber, spicy mayo, kabayaki sauce, tobiko)🌈

①, ② 🐲Fire Dragon Roll ($20)
🐯Golden Tiger Roll ($18)
③, ④ 🍤Crunchy Spicy Tuna Roll ($18)
🫚Ginger Crazy Roll ($20)
⑤, ⑥ 🥑Salmon & Avocado Roll ($11)
⑦, ⑧ 🌶️Spicy Tuna Lover Roll ($20)
