Ultra thin homemade pancakes, sliced cucumber, spring onions and hoisin. For me Peking duck is maybe the ultimate bite. Everything you want in one mouthful. Tender, well seasoned duck meat, crispy skin that has a little rendered duck fat on the inside, cooling crunchy cucumbers and a complex, spiced, sweet hoisin. The soft pancakes are the perfect vehicle for all this goodness. There are some strong contenders in London for Peking duck, interested to know which are everyoneβs favourites!
