Kaikatei 開化亭 1st visit — renowned Chinese restaurant in Gifu, original location of Furuta Ginza, now operated by his oldest son. Cost performance here is much higher than Furuta, and I really enjoyed the neighborhood vibe. Some highlights include fukahire which was first pan seared for better texture; and a computation of fresh and dried abalone. The quality of the beluga caviar was also surprisingly high. •
