A great journey around Madrid offals: a perfect crispy, succulent, flavorful piglet head (cabeza de cochinillo) is the biggest highlight of Javi Estevez’ La Tasqueria, but also the tripes (callos madrileños: with beef tendon, feet, chorizo..), the sweetbreads, lamb tongue, piglet tail, liver terrine and other delicious delicacies didn’f fail to impress me!
