1) Oscietra caviar and egg salad on brioche
2) Chicken liver mousse with Colorado cherry mostarda on almond financier
3) Cavatelli with local corn and chanterelle mushrooms and Australian summer truffles
4) NY strip (Colorado beef) and morels in a sublime jus
5) Charmed, I’m sure (62-degrees summer nights)
*I’m no Colorado expert, but, duh.
