In Oslo, at 3-Michelin-starred @maaemo, Chef Esben Holmboe Bang @esbennmedb has created a gastronomic vision rooted in Norwegian heritage.
The name, from Old Norse meaning “all that is living”, perfectly encapsulates his philosophy: a cuisine that honors tradition while showcasing the country’s pristine bounty.
From their signature oyster (on the menu since day one, now in the Norwegian national museum) to an impressive 900g langoustine masterclass, every dish celebrates the purity and quality of Nordic ingredients.
Virtually all the dishe showcased immaculate cooking at a high 3 star levels such as perhaps the best bread of my life or the largest langoustine perfectly cooked, arguably the 2nd best of my life, though one could wonder how it had tasted were it not a day old.
But here’s the paradox: exceptional food doesn’t guarantee an exceptional experience. While the cuisine was undoubtedly one of the best meals of my life, the rest fell short. A cold greeting, a coffin-like foyer, rushed service between seatings; it felt systematized and sterile, lacking the warmth and genuine hospitality that separates great restaurants from unforgettable ones.
The verdict? Maaemo succeeds brilliantly at the plate, but struggles with the complete dining experience and I unfortunately have no need to return.
