Popped in to try the new-ishh omakase that took over from Taku earlier this year. A strong new direction with a few slightly more playful courses mixed in amongst the sushi.

Started with some refined small bites before moving into the cooked courses, and one of my favourites early on was the abalone chawanmushi with summer truffle. Super silky, really deep flavour from the abalone and the truffle seeped beautifully into the egg.

The grilled red mullet with sea salt was another standout. Really simple, perfectly cooked and one of those dishes where there’s basically nowhere to hide. Charred crispy skin and tender fish with some yuzu sake on the side.

Nigiri was strong throughout, but the scallop was probably my favourite piece of the night. Really delicate, buttery and well balanced with the sweet soy on top.

Then the most memorable course of the entire menu: the foie gras ice cream sando with caramel, dark chocolate and sea salt. Sounds like a mad combination, but the balance was immaculate. Rich, sweet, salty, slightly bitter from the chocolate. A very clever middle course before continuing through the journey.

Finished with tamago and Eton mess to close out the 20 courses. Really enjoyed this one. Top ingredients, great pacing and enough interesting dishes in there to make it feel a little different.
