The Sado Sea is rich in fantastic local product that includes tuna, clams, shrimp, shiromi, kani and hikiarimono (particularly iwashi). Many regions of Japan are blessed with fantastic local seafood but relatively few can boast fantastic versions of quite so many items. These are often the sort of items that stay local and don't make it to Toyosu, part of a growing trend where higher end restaurants (thanks partially to social media) can compete to serve this produce locally to customers willing to travel far and wide.
