The meal starts with a spoon and a bowl. Instead of chawanmushi, Kobayashi-san serves a seasonal porridge. In mid winter it's almost entirely shirako while few months later there is rice, some sansai, and an crispy cracker of fugu skin. This certainly feels more like a washoku dish, but it is a fantastic way to appetize for the sushi.
