산청숯불가든 마곡 / サンチョン(山清) 炭火ガーデン/ Sancheong Charcoal Garden Magok
ソウルで人気の黒豚炭焼き専門店『サンチョン(山清) 炭火ガーデン』を訪ねます。
ビルの立ち並ぶ明洞エリアにありますが、店のある路地裏感がはなからテンションを上げてくれます。忙しい時には数時間待ちの人気だというが、この日はラッキーの待ち時間なしでの入店。屋号は、韓国南部にある山清郡が由来で、同地の名物がサムギョプサルなんだとか。同店の豚肉も山清郡にある自然豊かな智異山からやってきたそうです。
山清黒豚の塩焼き。
これはサムギョプサルではなく、オギョプサルというらしい。サムは数字の３、オは数字の５を意味するらしく、それぞれの肉の層を指すのだとか。皮付きのサムギョプサルをイメージすれば間違いないそうです。笑 そのおかげなのか、強い食感が生まれて、咀嚼の先にじっくり旨いが続くような味わいに。
いろんな調味料が活躍するのも韓国料理の魅力。タニシで作ったという塩辛ソースもいいし、韓国風の味付けの明太子も不思議と相性がいい。
黒豆韓牛テンジャンチゲ。
オススメされたチゲスープにも挑戦。韓国らしい強めな辛味もいいが、コクというか甘さがあるのも特徴。黒豆を使用するのは韓国でも珍しいアプローチらしい。
韓国来たらサムギョプサル！っていう人にオススメです。実際にはオギョプサルですが。笑

Visited the popular black pork charcoal grill specialty restaurant 'Sancheong Charcoal Garden Magok' in Seoul.
Located in the Myeongdong area, it's said to be so popular that there can be a wait of several hours during busy times, but luckily, I was able to get in without any wait on this day. The restaurant's name is derived from Sancheong County in the southern part of Korea, where the local specialty is Samgyeopsal. The pork at this restaurant also comes from the naturally rich Jiri Mountain in Sancheong County.
"Sancheong Black Pork Salt Grilled"
This is not Samgyeopsal but something called Ogyeopsal. Apparently, 'Sam' means the number three, and 'O' means the number five, referring to the layers of meat. If you imagine Samgyeopsal with the skin, you won't go wrong. The strong texture creates a delightful taste that lingers with each chew.
While it's delicious with simple seasoning like salt or wasabi, the variety of condiments is also part of the charm of Korean cuisine. The salted spicy sauce made from snails and Korean-style seasoned pollack roe surprisingly complement the dish well.
"Black Bean Hanwoo Tenjang Jjigae"
I also tried the recommended stew, which has a distinctive Korean spiciness, but the richness and sweetness are noteworthy. It seems the sweetness comes from black beans, which is apparently a unique approach even in Korea.
