FIL D’OR / フィルドール

誰にも教えたくない店、誰にもそんなお店があるだろう。

もちろんミトミえもんにもある。金沢エリアに限れば、それは間違いなく『FIL D’OR（フィルドール）』だ。地元の食材を活かしたフレンチ仕上げの料理に定評があり、シェフこだわりのナチュールを中心としたワインも魅力。そして、シェフの田川真澄氏にはもう１つの顔がある。

話題になった「FILFIL」という、カカオ豆の選定から製造まで全ての工程を担う手間暇かけたチョコレートブランドのプロデュースも行う。いわゆるビーントゥバーのチョコレートだ。現在はこのチョコレートに注力しているので、料理人としてはお休み中。それでも向かいにあるワインバーにて絶品の料理を振る舞ってくださいました。

ワインバーですから、ワインもちゃんといただきましょう。

かのジュヴレ・シャンベルタンの作り手であるトラペによるアルザスのワイン。ビオディナミ農法を実践しており、よりナチュールのニュアンスを強く感じます。2種類いただき、「ア・ミニマ・ブラン」が絶品。マンゴーや洋梨のようなニュアンスのあるみずみずしいフレッシュ感が最高です。いい出会い。

素敵でしょ？誰にも教えたくない気持ちが伝わりますよね。ikただ、もうずいぶんと人気店になっておりますので、そろそろ正式にご紹介させていただきました。シェフは、また料理店を復活させたいという気持ちがあるよう。そんな日が今から待ち遠しいですね。ただし、誰にも教えたくない店ですので、復活してもまた誰にも教えないと思います。笑


Everyone has that kind of store, the store you don't want to tell anyone about.

Of course, Mitomiemon has such a restaurant. If it is limited to the Kanazawa area, it is definitely "FIL D'OR. The restaurant has an established reputation for French-finished cuisine that makes the most of local ingredients, and its wines, mainly naturals, which are the chef's specialties, are also appealing. Chef Tagawa also has another face.

He also produces the much-talked-about "FILFIL," a chocolate brand that takes time and effort in all processes from the selection of cacao beans to production.
Since he is currently focusing on this chocolate, he is taking a break as a chef. Even so, he served us a superb meal at the wine bar across the street.

Since it is a wine bar, let's have a glass of wine as well.

The "A Minima Blanc," one of the two wines we were served, was superb. The "A Minima Blanc" is the best of the two. It is fresh and lush with nuances of mango and pear.
Lovely, isn't it? You can tell I don't want to tell anyone. However, since the restaurant has become so popular already, it's time to officially introduce it to you. The chef seems to have a desire to bring the restaurant back to life again.
