I finally had the chance to visit Japanese Cuisine Fuji, which is currently receiving rave reviews from both the culinary world and chefs alike!Similar to renowned establishments like Narumi and Onishi, this restaurant focuses on Japanese cuisine featuring fresh fish sourced from the famous Sasue Maeda Fish Shop in Shizuoka.The dishes are refined, showcasing the quality of the ingredients, but what truly impressed me was the flavor of the fish and the cooking technique. Each fish was incredibly fresh, and thanks to Mr. Maeda's expertise, the natural flavors really shone through. The grilled white sweet sea bream and Spanish mackerel made me exclaim "delicious" the moment they touched my palate. The grilled sea bream had a crispy skin while the flesh was surprisingly delicate and silky, creating a delightful contrast when bitten into. The Spanish mackerel had an unbelievable moisture retention, with a texture that felt almost raw despite being perfectly cooked. It was a rare encounter with genius-level cooking. These dishes of sweet sea bream and Spanish mackerel were among the best I've ever had!I also wanted to try the famous bamboo shoots that are deep-fried and then grilled after removing the batter, but unfortunately, they were out of season this year. I definitely want to try them next year.This restaurant is worth visiting in Shizuoka, but I learned the hard way that getting drunk can make the return trip on the Shinkansen quite challenging!
