Launched by @jmrodrigues , chef owner of @restaurantecanalha and his wife @vavar in 2023 as part of the @projectomateria , this initiative is now in its second season and continues to raise awareness of the various Portuguese regions, their local products, their people and their rich gastronomic heritage, while sharing knowledge through collaboration between local and international chefs.
It is a significant contribution to the mapping of what our culinary culture has to offer.
Because without knowledge, good cuisine is impossible; without sharing, history is lost; without the past, there can be no progress; and without interaction and experimentation, original thinking and creativity cannot flourish.
