Presidential Beef Noodle: 120g of noodles, five 4in cubes of beef, and one piece of tendon. The beef comes from 4 countries - Japan, Australia, US, and Brazil. Wang Cong-Yuan, the chef and owner of the shop, uses a technique where he slow-braises the meat over three days, and freezes the individual pieces every night so they can rest in between. The process for all the different cuts of meat takes about one week. For the broth, five to six different stocks are used, each from different parts of the beef.
