En, a popular shop in Tokyo, has been a popular destination since 2009, offering three bowls of note: Niboshi, mukashinagara, and shio. 味噌煮干 / Miso Niboshi / Niboshi Iwashi Ramen En - Hachiōji, Tokyo

Niboshi based soup is combined with miso tare and pork back fat. Hirauchi style wavy flat noodles are cut medium thick. Toppings include ajitama, lotus root, negi and a niboshi paste ball. The standard bowls at En contain a clear niboshi shoyu soup, this ‘Miso Niboshi’ is a limited menu item. Recommended bowl: Niboshi shoyu

The bowls at En come with thin, house-made noodles in a niboshi-shoyu soup. Toppings options are the classics: menma, chashu and tamago. After its debut in May 2009, En quickly vaulted high in the rankings for niboshi ramen. OG master Tanaka-san has since retired, the shop now managed by his son. 2nd branch located in Nagoya since 2016.
