another notable yoshoku outpost of kanazawa, here specialising in spanish with a touch of japanese flair and a showcase of ingredients from noto peninsula. i really loved the ambience of the restaurant, staff here were also super friendly and extremely tourist friendly with several english speaking staff.

wouldn’t say the food here was exactly spanish, maybe apart from the paella which for me was the star of the meal. topped with a plump lightly poached ishigaki oyster, the paella itself was full of seafood brininess and flavour with perfectly textured arroz. if i was to compare, personally loved this version more than the famous joint in tokyo originally from kyoto. the rest of the meal had a rollercoaster of unique flavour combinations like an aged zucchini with a boar meatball, yomogi pudding. another two dishes i really enjoyed was the grilled local purple nasu on bear meat with smoked beurre blanc and the yellow tomato sauce with squid cut into ‘pasta.’ overall a pleasantly slow and enjoyable meal, an easy reservation and really like the way they highlight ingredients from this part of japan.

World class Spanish-Japanese Fusion place in Kanazawa.
石川の食材を丁寧に使った愛に溢れる美しいお料理。
美味しく楽しく頂きました。
新しくできたウェイティングルームが幻想的で客人はそのお部屋に足を踏み入れるや否や、、ブルーライトの別世界、山々の部屋、、に誘われます。
素晴らしいデザインでした。
我々、キリマンジャロ登山してきたばかりなので山を思わせるそのテーブルで、山の話にも花を咲かせながらお料理開始までゆっくりと過ごしました。
もうここですでに百点です。笑
お料理はお野菜の新鮮さ、食材の良さが際立つコースで最後まで十二分に楽しみました。
蝦夷鹿の火入れ、素晴らしかったです。
このタイプのお店の進化のスピードはやはりシェフの情熱によるところが大きいのでしょう。
若き才能溢れるシェフが、またこうして北陸を拠点に
楽しく美しいお店をレベルアップさせていっているんだなとしみじみ感じ入りました。
建築、デザイン、全てがハイセンス。
なんとなく今流、ではなく皆様の評価の通りの実力と満足感。
マスク越しですので折角のスタッフさん達の説明が聞き取りにくいのが、、これも広尾のod●と似てる点ですが、、笑、、が、残念でしたがお料理は最高でしたよ。また伺えればと思います。雰囲気など広尾のそのお店に似ているのでつい。

Here we have another example of a great Spanish Japanese fusion execution. The Chef worked in Barcelona for Abac and incorporates his experience and memories into his menu.
The flavor profile is clearly Japanese and there are only retraces of his time in Spain but still it works greatly. The execution was for this... More

The flavor profile is clearly Japanese and there are only retraces of his time in Spain but still it works greatly. The execution was for this meal perfect with not one let down and the service and hospitality excellent.
Once we dig into the compartments in the Paella Bento, we found more treasures! The Ensalada Rusa of Hairy crab was one of my favorite, super delicious crab meat on creamy potato salad. Spanish mackerel came in big size and moist; Escabeche of Yanaga Hachime (local fish) was exactly what you would expect from escabeche in taste, the fish was deep fried first.

Salad of Takafarm got great array of radish and root vegetables, plus kogomi (ostrich ferns), one of my seasonal favorite. Pil-Pil of Scorpionfish and clam got big pieces of hamaguri clams, so juicy and full of sea flavor!

But for me the best was definitely the paella! In fact it seemed to taste even better when saved for next day. So robust in flavor, tomato, saffron, seafood and pork. Those cute piggies made with pickled daikon actually cut through the rich flavor, very clever! I wouldn’t mind having the paella again even on its own.

All in all, great packaging, great efforts, great value for 🥘🍱 _
