For some reason a Spanish Japanese places works for me much better than a French Japanese one, in Japan. I love the Japanese French fusion restaurants in Paris. Somebody figure....
Here we have another example of a great Spanish Japanese fusion execution. The Chef worked in Barcelona for Abac and incorporates his experience and memories into his menu.
The flavor profile is clearly Japanese and there are only retraces of his time in Spain but still it works greatly. The execution was for this meal perfect with not one let down and the service and hospitality excellent.
