農口研究所/羽咋自然米 Sake/rice
We imaged this plate from Kenrokuen garden, one of the three outstanding gardens in Japan. This dish expresses every season's landscape and colors in Kenrokuen garden.

The froth on the top is made from Japanese sake produced at Nouguchi lab, famous rice wine cellar in Ishikawa pref.
Underneath, there is an espuma of a Spanish traditional dessert named "Arroz con leche”, cook rice with milk. We used rice grown in Hakui, Ishikawa, without any agricultural chemicals.
At the third layer, we put ice cream made from "Noto milk”, an Ishikawa's special product. Finally, at the bottom, glanite using the same Japanese sake as the froth.
