We began with a selection of antipasti, each dish highlighting the restaurant’s dedication to high-quality ingredients and balanced flavors. The Focaccia Romana Rossa, topped with burrata di bufala, salsa di pomodoro, basil, and olive oil, was a fantastic opener—airy, crisp, and deeply flavorful. The Rucola salad, featuring wild arugula, red onion, walnuts, and parmigiano reggiano, offered a refreshing and nutty contrast, while the Fiori di Zucca, delicate squash blossoms stuffed with Bellwether Farms ricotta, showcased finesse in execution. The Dama Bianca, with shaved fennel, See Canyon apples, celery, piave DOP, and lemon, was a light yet complex dish, offering a perfect balance of sweetness and acidity.
Moving on to the pizzas, the Diavola stood out with its perfect blend of fior di latte, salame piccante, pomodoro, basil, and olio santo. The crust, made with the utmost care, was both chewy and crisp, serving as an ideal base for the vibrant toppings.

The Rigatoni all’Amatriciana, featuring guanciale, pomodoro, and pecorino romano DOP, had just the right amount of heat and depth. Meanwhile, the Linguine al Limone was refreshingly citrusy, with foglie di limone adding an elegant aromatic lift.
For the main course, the Costata di Maiale, a 14 oz Beeler’s heritage pork chop served with Murray’s roasted sweet Calabrian peppers, was cooked to perfection—succulent, juicy, and beautifully complemented by the sweetness of the peppers.
The wine selection only elevated the experience further. The Sine Qua Non Distentia 2019 White was remarkable, offering an intricate mix of depth and freshness, while the Tignanello 1997 was simply outstanding, with its mature complexity and seamless integration of fruit, earth, and spice. Both wines paired beautifully with the meal, enhancing the flavors of each dish.
