I was looking forward to visiting Kataori again this time.This visit was with four people.For the other three, it was their first time at Kataori, and two of them were guests from overseas.Every time a dish was served, their eyes sparkled with excitement, and they repeatedly expressed how it was their first experience at such a restaurant, which made me happy as well.Before I knew it, we were ordering Japanese sake one after another (laughs).It was clear that they were genuinely enjoying the wonderful aspects of Japanese food culture.Personally, the dish that captivated me the most this time was the oysters.I have had countless oysters throughout my life, but these were undoubtedly the best I’ve ever tasted.Rich yet free of any off-flavors, the umami quietly spread in my mouth, leaving a lingering aftertaste...It left such a strong impression that I can still recall it vividly.The abalone was also shocking.Its tenderness, aroma, and flavor were the best I’ve ever had.I was so moved that I thought, "I can’t believe such abalone exists."Experiences like this are why I can’t stop my culinary adventures.What I love about Kataori isn’t just the food.They remembered my preferences from our previous conversations and prepared a little extra of my favorite burdock roll to accompany the final white rice.Such thoughtful gestures are truly delightful.It’s one of the reasons I feel like I’ve "come back home" here.Recently, there are many restaurants that think adding caviar or truffles makes a dish feel luxurious.Of course, that’s one form of expression, but I am much more moved by dishes that refine each ingredient to its utmost potential rather than just layering materials.Kataori’s cuisine embodies this philosophy.Without relying on extravagant presentations, they beautifully express the seasons, ingredients, and local blessings on a single plate.That’s why each dish feels dignified and somewhat precious.Kataori shows different scenery with each season.I’m already looking forward to what kind of dishes I will encounter next time.Thank you for reading until the end! ✨Likes and follows are very welcome! ❤
