The so-called “modernisation” of traditional cuisine is, more often than not (and let’s be honest, probably 99% of the time), pure nonsense. It is done to give chefs something to talk about. The “modernised” dish bears little resemblance to the original in terms of taste. This is how it should be done. @yenisoho’s mantı takes the traditional dish and refines it from a substantive perspective, not through superficial, form-obsessed gestures. The result is simply one of the tastiest mantıs you will ever eat.
