Japanese cuisine outside of Japan is often at its best in major cities — from Los Angeles and New York to Paris and Hong Kong, there is no shortage of places offering remarkable precision and authenticity.

That was also my thought when I spontaneously booked one-Michelin-starred Murakami for my final lunch in São Paulo. Instead, the akami was watery and metallic, the shrimp tempura neither hot nor crisp, and the nigiri lacked any of the precision I associate with serious sushi. A good uni temaki was one of the few brighter moments.

This was an unexpectedly weak meal — and one that left me wondering how Michelin arrived at its star.
