Before entering, I was asked to present a photo ID with my face, a strict measure against seat selling. Initially, I thought the chef might be difficult due to this, but he turned out to be very kind, and our conversation flowed wonderfully. I learned a lot about his pride in Edomae sushi, the ingredients, and various past experiences.
