This ramen is undoubtedly among the top in Tokyo. I can see why it has such a high rating of 3.99 on Tabelog. Since this place is reservation only, I booked online the day before my visit. The interior is quite compact, and the owner manages everything from serving to cooking, which means they don’t accommodate too many customers at once. The shoyu ramen has a rich and savory flavor, with a complexity reminiscent of grilled dishes. Despite its depth, the overall balance is excellent, with multiple layers of umami coming together harmoniously. The char siu with a slightly charred fat is exquisite, and the chicken char siu is surprisingly tender, melting in your mouth. It was so delicious that I found myself wanting more. I hear they will soon open in Hong Kong, so I’m looking forward to that. If you’re a ramen lover in Tokyo, this is definitely a bowl you should try at least once.
