I was invited by an acquaintance to finally visit Matsukawa, a renowned restaurant that every Japanese cuisine lover should experience at least once. The dishes showcase the finest ingredients, beautifully presented in stylish tableware, creating excitement even before the first bite. The shabu-shabu with conger eel and yuba was delicious, enjoyed just as the eel began to curl. The rice, highly praised by everyone, was accompanied by marinated salmon roe, fresh karasumi, chirimen sansho, and nori. It was shockingly delicious. The smooth texture and consistency of the mizu-yokan (water jelly) were fascinating—how does it hold its shape? It paired perfectly with matcha and was absolutely delightful. It was a blissful experience.
