I enjoyed the "Dequvert" lunch course at La Baie, located within The Ritz-Carlton Osaka, paired with wine and champagne.We started with a welcome amuse-bouche featuring three items: "Botan Shrimp Tartare," "Comté Cheese and Onion Mousse," and "Silk Salmon." We savored them in the recommended order from right to left, and with each bite, the high level of craftsmanship became evident, raising my expectations for the course.Next, the amuse-bouche of "Marinated Scallops with Seaweed Jelly, Coral Powder, and Horseradish Cream" was a remarkable dish where the rich, smooth cream harmonized beautifully with the delicate sweetness of the scallops, leaving a lasting impression.The appetizer, Kin-Kin fish, was marinated with fleur de sel and lightly grilled over charcoal, enhancing the savory flavor of the fat with a delightful aroma. The combination with celery jelly, root celery cream, and tomato vinaigrette was superb, allowing me to enjoy every last bite.The butter confit white asparagus had a gentle texture reminiscent of a Western-style chawanmushi (savory egg custard). The consomme flavored with Vin Jaune showcased the umami of the sea bream, pairing excellently with the thinly sliced abalone. This dish was a memorable fusion of Japanese and French cuisine.For the main course, I opted for the roasted Wagyu beef for an additional charge. The cooking was impeccable, with the moist meat beautifully complemented by the red wine sauce. Additionally, pairing it with carrot puree and black garlic paste added depth to the flavors, allowing me to enjoy various nuances within a single dish.The dessert was elevated as well, featuring a crepe Suzette prepared right in front of me. The live flambé experience was thrilling, and the staff provided detailed explanations throughout the process, making it visually enjoyable until the end. The petit four cart that followed was also impressive. Although I wanted to try everything, I could only manage three varieties due to being full. Nevertheless, the quality remained uncompromised until the very end.Not only was the food exceptional, but the service was also top-notch. The explanations of the dishes and wine, as well as the timing of inquiries about my impressions and attention to the air conditioning, were all natural and comfortable, showcasing a level of hospitality that truly impressed me.The restaurant is enveloped in a classical and elegant atmosphere, providing a special experience. I learned that the lighting is dimmed in the evening, creating an even more serene environment, so I definitely want to visit for dinner next time.While the price is not casual, it is undoubtedly worth it, making me think, "I want to come back soon." The entire experience—food, wine, service, and ambiance—exceeded my expectations. I wholeheartedly recommend this establishment for special occasions or for anyone wanting to savor authentic French cuisine.
