The quality of the ingredients, the meticulous preparation, and the overall excellence of the sushi made for an unforgettable dining experience.One standout was the uni from Honda-ya. Its aroma, sweetness, and clean finish were remarkable, and the moment it touched my palate, I couldn't help but nod in appreciation of its deliciousness. The sea bream from Fujimoto was also exceptional, showcasing beautiful texture and umami. Instead of being flashy, it offered a deep, lingering flavor that conveyed the power of the ingredients and the skill of the chef.Additionally, the tuna sourced directly from Niigata was impressive. Its freshness was evident, and the rich flavor and aroma of the red meat were beautifully pronounced, clearly demonstrating that they serve high-quality tuna in excellent condition.And we can't forget the grilled botan shrimp, a must-try at Sushi Akira. The balance of its savory aroma, sweetness, and the umami brought out by grilling was outstanding, exceeding my expectations. It had a different charm compared to raw shrimp, with a fragrance and concentration that lingered in my memory.Overall, it was clear that the focus was not just on presenting high-end ingredients, but on thoughtfully enhancing the unique qualities of each one. The flow of the sushi was pleasant, and I enjoyed a highly satisfying experience from start to finish. It's no wonder that reservations are so hard to come by at this renowned establishment.
