I visited "Ajiman," located about a 5-minute walk from Roppongi Station, tucked away in a back alley just off the bustling main street.Since its establishment in 1981, this family-run restaurant has earned a Michelin star in the past and currently holds a Silver rating on Tabelog, showcasing its impressive culinary skills.Ajiman operates on a completely referral-only basis, not accepting reservations from first-time visitors. Despite its top-tier pricing in Tokyo, it attracts discerning regulars seeking winter delicacies, who flock here night after night.♦︎ A rustic yet refined atmosphere reminiscent of a traditional small eatery ── The exterior does not resemble a high-end Roppongi establishment, instead exuding a nostalgic charm typical of old-fashioned small restaurants. Inside, the space features counter seating and several private tatami rooms, creating a calm and intimate dining environment. While the restaurant has a down-to-earth rule of cash-only payments (no cards accepted), the staff's unpretentious and attentive service ensures a relaxed dining experience until the very end.♦︎ The menu items I enjoyed ── 【Niko-gori】 【Tessa】 【Liver Sauce with Condiments】 【Grilled Soft Roe】 【Kara-age】♦︎ Robust preparation and overall impressions ── Ajiman distinguishes itself from the polished modern pufferfish dishes found in Tokyo, featuring a bold style that involves cutting natural Japanese pufferfish weighing around 1.8 kg into generous portions. Each piece of pufferfish, carefully processed and aged, offers an exceptional texture, complemented by a sharp homemade ponzu sauce made with generous amounts of kabosu, enhancing the natural flavors without overpowering them.Without relying on gimmicks, the straightforward presentation—from the generously sliced sashimi to the piping hot kara-age and the rich, concentrated flavor of the final zosui (rice soup)—conveys the strength of the ingredients. This restaurant possesses a unique prowess that reflects a rich history and the underlying culture of pufferfish dining in Tokyo. It was a great meal.Review posted by "Instagram@_1show". Thank you for reading until the end. I appreciate all your likes, follows, and saves of this restaurant.
