He trained in Ginza from the age of 19 and honed his skills at "Komehachi" in Komatsu, Ishikawa, in 1958. He opened "Komatsu Yasuke" at the age of 36.He is famously referred to as "the Jiro of the East, and Yasuke of the West."Today, I visited for a lunch meeting at 1 PM.*Menu*- Marinated Tuna- Red Squid- Seared Fatty Tuna- Sweet Shrimp- Seared Sweet Sea Bream- Water Eggplant- Mini Rice Bowl with Sea Urchin and Tuna- Simmered Clams- Grilled Eel with Cucumber- Bamboo Shoot Soup- Dried Gourd Roll (additional)~A few thoughts~The standout dishes were the sweet shrimp, water eggplant, and grilled eel with cucumber. The wasabi was on the sweeter side, and there were creative touches like searing the fish or adding citrus to complement the flavors.The number of sushi chefs and staff was impressive, creating a lively atmosphere. They addressed us by name, quickly noticed when drinks were running low, and efficiently replaced our oshibori (wet towels).I understand why this place has been loved by locals for so many years.
