Still, I decided to go for the intriguing Special Shoyu.The toppings included 4 slices of chashu, 2 wontons (shrimp and meat), green onions, and nori. According to other reviews, all the chashu was supposed to be pork belly, but I thought there might be some loin meat as well. Additionally, the chashu had a hint of marinated flavor, enhanced by a charcoal-grilled taste.At first, the broth had an interesting sourness, but it gradually transformed into a more mellow aftertaste, which I got used to over time. By the end, I nearly finished the entire bowl of soup.The noodles were particularly remarkable. They were made extremely thin, resulting in a soft texture, yet I could still feel a nice chewiness. Among thin Chinese noodles, I found this to have a delightful texture.In summary, this dish reflects the chef's philosophy beautifully.
