Nabeno-Ism is a place where you savor the chef's philosophy more than the dishes themselves. Built on the techniques honed over many years at Joël Robuchon, it seamlessly incorporates Edo-period culinary culture and ingredients from nearby traditional shops, creating a unique world of its own.What stood out to me were the sweetfish and soba dumplings. The sweetfish, paired with cucumber, wasabi, and aged pâté, somehow captures the essence of summer. The soba dumplings, even when layered with caviar and sweet shrimp, still let the soba take center stage. The chef excels at subtraction.The knife fish is prepared in a light style reminiscent of Barigoule, while the Aichi duck is elevated by the fermented aroma of Daidokoro natto. Despite the lack of flashy presentations, each dish has a remarkably clear destination.Even the desserts are impeccable. By the time I finished, the word "completion" came to mind before "fullness."While gazing at the scenery of Asakusa, I spent a few hours traveling between Edo and France. Securing a reservation at such a place feels like winning half the battle.
